Afternoon Energy Smoothie
I’ve been dragging in the late afternoons and this week I’m reaching for something other than coffee to help me through that feeling.
Last January I was on that TVF Vegan Challenge and those 31 days did a lot to shift my perspective on the perceived difficulties of a vegan diet. Mainly I was stressed about the extra time it would take to cook for myself & also the carnivore every night like I usually do. Guess what? It wasn’t that hard and I was happy that I took a risk & committed to the challenge.
There was another discovery more relevant to today’s smoothie: I enjoyed replacing my afternoon coffee with a smoothie or green juice. I found it to be an easy swap that left me feeling energized (and satiated) much longer than another cup of caffeine.
What does your afternoon look like these days?
Ingredients:
¼ c pineapple, frozen
1 c kale or 2 kale leaves, de-stemmed
1 tbsp coconut oil or coconut butter
½ avocado
1 c water or coconut water (or substitute milk or nut milk of choice)
Directions:
Toss all ingredients into your blender and do a little dance with the smoothie.
Infusion opportunity:
The coconut oil is a prime infusion medium & I’m waiting on a delivery of Madame Munchie's infused coconut oil to try out the next time I make this smoothie.
