Did you know?

Surprisingly, bell peppers, of all bell peppers, provide the most vitamin C per calorie. This makes these vegetables heavy hitters for the intake of this health-promoting vitamin, which is known to be good for the blood vessels found in our eyes. Science suggests it can lower the risk of developing cataracts. Heat will break down vitamin C, so go raw when you can. The carotenoids, zeaxanthin, and lutein, are vitamins your body cannot make on its own, but you can find this nutrient in squash all year long. Summer squash also has loads of vitamin C and Zinc, while winter squash provides vitamins A and C, plus omega-3 fatty acids. If you’re not into squash, broccoli, brussel sprouts, and other related veggies are great sources of vitamin A, vitamin C, and vitamin E. These vitamins are all considered antioxidants, protecting the cells in our eyes, especially our retinas, along with our skin from free radicals, which are known to break down healthy tissue.

Fun Fact:

While it is well known that carrots are effective in improving one’s eyesight, increasing fruit and vegetable intake can also keep our eyes healthy by helping to prevent two common aging-related eye diseases - cataracts and macular degeneration - which afflict millions of Americans over the age of 65. The carotenoid zeaxanthin, found in bright yellow and orange fruits and vegetables, plays a role in protecting the eyes from the harmful effects of oxidation and light-induced damage.
